Smashed Chickpea Salad

What's better than making a delicious, plant-based meal? Getting to engage in some cathartic chickpea-smashing while you make it.

 

Husband left your favorite coffee mug on the roof of the car? Dog taken to peeing on your favorite rug? Coworker typing particularly loudly these days? Smash out the anger and make a tasty, healthy meal while doing it.


Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 3-4

 

Ingredients: 

  • 1 can (15 oz) chickpeas

  • ½ cup celery, diced (about 2 stalks)

  • ½ cup carrots, diced (about 2 large carrots)

  • ½ yellow onion

  • 1 tbsp. water

  • ⅓ cup hummus, plain

  • 2 tablespoons mustard (stoneground or dijon)

  • ¼ teaspoon garlic powder

  • Salt and pepper, to taste

  • Juice of 1 lemon

  • 2-3 green onions, chopped

  1. Drain and rinse your chickpeas and set aside. Dice your celery, carrots and onion. Over medium heat, cook the veggies and tablespoon of water until slightly softened, about 4-5 minutes.

2. In a large bowl, combine cooked vegetables, chickpeas, and all remaining ingredients, stirring well to combine.

3. Scoop chickpea salad onto toasted whole grain bread, a wrap, or enjoy on its own! Best served chilled.
